Have the 1st and 2nd versions of the Matrix been filled out or elaborated on with any story besides the obvious stuff, ie: Seraph and angels were "agents' of utopian 1st matrix, 2nd matrix was chaos and basically like hell...

Anything like more characters, comics from these versions?

If they have could anyone provide links to the stories or comics if there are any?

Widow's Moor Seems to be a close enough aproximation to Version 2 (Hell Version)

I don't think we'll ever get to see the Paradise version, I think the whole thing has either been restricted , corrupted, or out right deleted. There are many references to Version 2 as seen by the Merovingian, The Lupines, Drinkers, Nightmares, Succubi and the Twins. However the only information we have of Version 1 is from the Architect, who built it, Seraph, and the Angels/Agents locked (important clue, LOCKED) in Pandora's Box # 4.

Why did the architect create a hell version anyway, surely the bluepills wouldn't survive there and die in the real world meaning the machines would lose power. Is it do with what Smith said about humans defining their existence through misery and suffering.

Well, first they created the 'heaven' version. The Machines found out that the bluepills needed misery and suffering too to accept the matrix.
Using machine logic, they went from a almost perfect heaven to hell.
That's really machine logic. First something positive. The figure out they need some negative too, so they go to negative. And a while later they got it balanced SMILEY
