Will I unlock/watch the cinematic movies as i complete the chapters or are you supposed to just watch them whenever?

You can watch the existing whenever. However a few of them are just still images, as there was no one capable to do cinematics at the time

It's generally a good idea to watch them ordered with the archives.  For instance once you finish the Chapter 5 missions, watch the Chapter 6 cinematic before starting the Chapter 6 missions.
